Long answer: Open world and story instances are easy enough to do with any weapon, but once you start getting into more difficult content only ranger uses longbow.

You can faceroll all 8 classes through PvE. The easiest classes are warrior, necro and guard, though warrior is the easiest of the three. Guardian and ranger are also great choices for learning. If you go ranger, please don't use a longbow and bear: ranger greatsword is one of the best weapons in the game.
